Raj kachori is an appetizing dish that is filled with mashed potatoes, chutneys, yogurt and spices. This kachori chaat is also known as the “king of kachoris”. The word itself resembles its meaning. Raj stands for royalty and kachori refers to the crispy deep fried snack. The outer crispy shell is the base of this dish and is filled with different fillings that give the kachori chaat its flavor. To make a perfect raj kachori the most important thing to keep in mind is to maintain the right temperature of oil. This is to ensure that the kachori gets crispy without getting overcooked or undercooked.
RAJ KACHORI
Preparation Time- 15- 20 mins
Cooking Time- 25-30 mins
Serves- 5-6 people
INGREDIENTS:
For Tamarind Chutney (Meethi Chutney)
~ 680 gram Jaggery (गुड)
~ 680 gram Dates ( खजुर)
~ 1 spoon tamarind (ईमली)
~ 2 cups of water (पानी)
~ Soak it overnight and then grind it.
For Green Chutney (Coriander Chutney)
~ 1 bowl coriander (medium sized)
~ 1 ½ tbsp ginger garlic paste ( अदरक, लसन पेस्ट)
~ ½ tbsp cumin seeds (जीरा)
~ 8 green chillies (हरी मिचँ)
~ 1/4th tbsp black salt (काला नमक)
~ ½ lemon (नींबु)
~ 2 tbsp yogurt (दही)
~ Salt according to taste (नमक)
~ 1/4th cup water (पानी)
~ Grind all the ingredients and take it out in a bowl
For Sweet Yoghurt ( Meethi Dahi)
~ 3 cups of Yoghurt (दही)
~ 4 tbsp sugar (चीनी)
~ Mix it well
For Dough
~ 1 cup All purpose flour (मेडा)
~ 1/2 cup Semolina ( सुजी)
~ 1/4th tbsp Salt (नमक)
~ 1 and a half cups of water (पानी)
For Filling
~ 6 boiled potatoes (आलु)
~ 1 small onion chopped (पयाज)
~ 2 Green chillies chopped ( हरी मिचँ)
For Garnishing
~ Sev (सेव)
~ Pomegranate (अनार)
PROCESS:
For dough
~ In a bowl add Sooji, Maida, Salt, and water and knead a soft dough
For Frying Kachori
~ Take a medium sized ball from the dough
~ Apply flour on it and roll it out.
~ Repeat the process for the rest of the mixture
~ In a pan heat oil on medium flame and fry the kachori till it’s golden brown and crispy
~ Place it on a tissue paper so that excess oil is soaked and let it cool down
For Preparing Kachori:
~ Make a hole in the centre of the Kachori
~ Add a spoonful of mashed potatoes
~ Add green chutney, meethi chutney, some curd, and chaat masala
~ Sprinkle some sev and pomegranate for garnishing
